Title: Cissy and Val's Mustard Greens Mayonnaise

Yield: 5 Cups

2cPacked, finely shredded
  Fresh mustard greens
1 Egg
5 Large cloves garlic
2tbRed wind vinegar
2 2/3cVegetable oil
2tbDijon mustard

Puree in blender or processor mustard greens, egg, and garlic. Drizzle slowly as you add red wine vinegar and vegetable oil to pureed mixture. Mix thoroughly, then add Dijon mustard. Stir well until all ingredients are blended. Store in half pint jars in refrigerator.

We have found this mustard greens mayonnaise to be a marvelous sauce for chicken, grilled meats, and many vegetables.
